With better weather on the horizon, it feels natural to turn to the wonderful world of salad when it comes to feeding time at the zoo. I tried this easy recipe from the Tesco magazine and it was pretty good, although of course i made a few adaptations really just because I didn’t have all the ingredients to hand (oops). Anyway, it’s a great combination of smooth, cooling cucumber, firey chilli, lime juice and coriander which makes the perfect addiction to any packed lunch or barbecue.
The recipe isn’t really a recipe, you essentially just combine all the ingredients and hey presto – dinner time! I used half a cucumber peeled and sliced, then added one diced chilli, onion, half a yellow pepper, some cherry tomatoes and a good handful of chopped coriander. Dress with a little oil, the juice of one lime and season with salt and pepper. The addition of some toasted nuts would really make this amazing.
I served it with some baked salmon and steamed cabbage for a quick dinner. Will you be giving it a go?
