Quick & healthy prawn curry



I made the easiest curry at the weekend, basically to use up what I had in the fridge – but it turned out delicious! You could easily substitute the prawns with extra vegetables or chicken and it would be just as tasty.


packet of cooked prawns

2 shallots

1/2 teaspoon of lazy garlic

1 tablespoon of Neo Organics tikka paste

200ml passata

bunch of coriander

1 teaspoon cumin

1 teaspoon tumeric

1 teaspoon garam masala

3-4 tablespoons of natural yoghurt

Veggies of choice, I used green beans and babycorn


Fry the garlic and shallots on a low heat for about 4-5 minutes then add in the tikka paste (this one is free from added sugar and anything nasty so I highly recommend it) and all of the spices. Cook for a few minutes before adding the passata and half of the coriander. Turn the heat up a little and allow the sauce to boil before turning down to a simmer and allowing to reduce for 5 minutes.

Add in the cooked prawns and vegetables and simple heat by covering them in the sauce and leave them for a few minutes. Finally add in the rest of the coriander and the yoghurt. This tikka paste is quite spicy for my tastes but you might not need to add as much yoghurt depending on your preference.

I served this with rice and salad for my friend and it went down a storm! It literally took about 20 minutes from start to finish – what could be easier?
