I have been trialling a new diet plan this week, but I want to see what the results are before I start blogging about it. Instead, here are a few snaps of what has been gracing my plate in the last seven days! I finally made these little individual omelettes (1) which have been all over the internet for months. You simply toss a few cooked veggies into silicone muffin cases and top with some whisked eggs and bake in the oven for 15 minutes. They are great to have in the fridge or freezer for breakfast on the go. I’m having a bit of a turkey addiction at the moment, so a few slices served with salad (2) is my favourite easy lunch. I’m getting a bit sick of red meat so used up the last of my chilli (3) the other night with some salad and home made mayonnaise. I always bulk out my chilli with extra veggies to make it go further and add to the flavour. On Saturday night I wasn’t hungry so a piece of smoked haddock was just the ticket for a light dinner (4). I covered the fish in chopped lemongrass, coriander and lime juice and baked in the oven for 30 mins then served with thai flavoured cauliflower, cabbage and carrots. The perfect end to the week!
