There’s nothing better than a guilt-free treat, and this one has got to be one of the sweetest snacks available without any added sugar and is entirely gluten-free! I was going to make plain old banana bread but decided to add in some pure cocoa powder to add a chocolatey hit. I’m glad I did! This is a great loaf to make at the weekend and portion up for lunch boxes or emergency snacks (we all need those in our handbags, right?!) You could also add some protein powder if you wanted to create a more filling meal.
3 overripe bananas
2 heaped teaspoons of cashew butter
50g butter melted
1 teaspoon of cinnamon
1 teaspoon of vanilla extract
60g coconut flour
20g almond flour
1 heaped tablespoon of cocoa powder
1 teaspoon of baking powder
Mixed seeds (optional)
Preheat your oven to 220c and grease a loaf tin with a little butter. In a bowl mash up the bananas and mix in the eggs, cashew butter and melter butter. Mix well and add in coconut flour, almond flour, cocoa powder, vanilla extract and baking powder. Pour the batter into the loaf tin and level out. If you want to add mixed seeds then sprinkle them on top now, and bake in the over for about 40 mins.
Serve warm from the oven with a little butter or ice cream to make a tasty dessert.Follow @fifi_reid
