January detox soup

soup 1Hello and a Happy New Year to everyone! Most of us have set resolutions to lose weight in 2014, which may seem like an arduous task after spending the past two weeks scoffing selection boxes and turkey sandwiches like they are going out of fashion. I’ve decided to start the new year by focusing on all the wonderful food which is good for me, instead of worrying about all the bad things I’m not supposed to eat. Luckily, I love vegetables of any kind, so I have come up with a January detox soup which is jam-packed with variety of fresh vegetables which have various health benefits and taste delicious. 1 carrot

1 onion

1 courgette

1 parsnip

1 red pepper



1/2 tsp ground ginger

fresh coriander

generous handful of spinach

leftover turkey (optional)

chicken or vegetable stock


Chop all the vegetables into reasonably small chunks. Cook the onion at garlic in a pot for a few minutes before adding the carrot, parsnip, courgette and red pepper. Pour in your chosen stock so that all the vegetables are covered and add chilli (as much or as little as your prefer), ginger and season with salt and pepper. After 20 minutes the vegetables should be cooked and you can add the spinach, chopped coriander and turkey before simmering for another five minutes.
