This was a dinner made up of leftovers, but it was actually pretty good! I had some chicken, green beans, tomatoes, quinoa and red pesto. Topped off with some fresh coriander.
My boyfriend and I were out for dinner last week before going to a Beatles tribute act, so I was a bit naughty and had nachos to start followed by this. I always think its fun to try and find the healthiest option on the menu, and this was one of them. Its chicken parmigiana with an amazing salad with asparagus and pomegranate seeds.
We visited the Glasgow Christmas market at the weekend and we were overwhelmed by all the delicious food on offer! As usual I was looking for a healthy option then I came across this amazing stall bursting with every variety of nut! I got a wee bag of honey roasted cashews which were really tasty.
