What did you have for lunch yesterday? Pre-packed sandwich? A greasy roll from the local burger van? Check yourself friend! You only get out what you put in, and that’s why you should be supplying your body with unprocessed whole foods to give you bounds of energy everyday. I threw together this lunch box at work (luckily I work in a cafe/deli and get to make my own lunch) but you could make this at home the night before and take it into work in a Tupperware tub.
It is jam packed with protein, a little fat and some veggies. Finish with a fruit salad to get your 5 a day.
100g fresh deli turkey
40g uncooked quinoa
5 sun blushed tomatoes
1/4 red onion
1 tablespoon of pesto
Cook the quinoa according to the packet instructions. This normally means rinse then boil in water for 30 minutes or so. I do this and make extra so I have some ready for lunches and dinner throughout the week; it also tastes nice cold, mixed with cous cous or green lentils.
Finely slice the turkey and combine all the ingredients in a bowl whilst the quinoa is still warm. Eat immediately or leave to cool before storing in the fridge for another day.
