Gluten free apple crumble


I had a few homegrown apples to use up this weekend, so decided to make a wee treat for my and the boyf. Unfortunately he doesn’t like apple crumble (crazy) so I kind of ate all this myself. Anyway, now that’s out in the open lets get to the recipe!


6 small apples peeled and diced
Golden syrup
Few knobs of butter
1 cups of desiccated coconut
1.5 cups of crushed up pecans
1 cup of ground almonds


Melt some butter in a pan and add in the apples. Cook for about 10 minutes on a low heat to soften and then lay out on a baking tray and drizzle with some golden syrup. The amount depends on your taste – I was trying to make a reasonably healthy so I did about 2 tablespoons.

In a bowl mix the coconut, pecans and almond flour before adding a few knobs of butter. Rub it together with your fingers and you will see the crumble start to change texture and become a little more moist.

Layer the topping on the apple base and finish with another drizzle of syrup before cooking in the oven at 200C for about 10 minutes or until golden.

I served mine warm with ice cream! What do you think?
