Easy, quick and healthy lunch

At lunch time it’s easy to pick up a ready-made sandwich from the supermarket or ever worse, a burger from the local fast food restaurant! I was stuck for a lunch idea yesterday and this is what I came up with; Tuna, red onion, avocado and fresh coriander. OK it’s nothing fancy, but it was fresh, healthy and delicious. This is also a great meal to make the night before for a packed lunch. Just remember to cover the avocado with some lemon or lime juice to keep it from turning brown before you eat it!

  1. My favourite quick lunch is bean salad. Just grab a can of beans (my favourite is cannellini), chop up some red onion, tomatoes and feta – drizzle with olive oil and balsamic vinegar. YUM!
