I picked up some bacon lardons at the supermarket the other day, now I have bacon in everything! I made this parsnip and bacon soup at the start of the week and had it for lunch more or less everyday. Can’t even describe to you how good this tastes.
I get a bit sick of eating chicken everyday, so picked up some beef during the week to make a nice warming stew for dinner. I marinaded this all day in fresh basil, cumin, smoked paprika, chilli and garlic them slow cooked it on the hob for a few hours with a beef stock. It wasn’t tough or fatty in the slightest, and just melted in the mouth.
I made lunch out of leftovers and this is what I came up with. Anyone got an idea for what I can call this?! Its a mixture of vegetables, sweet potato, honey mustard chicken topped with homemade guacamole. The recipe for the guacamole is described in my spicy chicken recipe.
I made cookies this week as a treat for me and my boyfriend. Let me stress, these are NOT clean or paleo cookies! I try to eat clean 80% of the time but I am only human and give in on occasion especially for cakes and cookies. We had a reasonably healthy chilli for dinner and then scoffed a few of these chocolate chip cookies for dessert.
