Spicy chicken with avocado dip

1402724_10153422532175338_876282479_oI thought I’d share this healthy chicken recipe I came up with the other night for dinner. I basically wanted a kick to my chicken to offset the creamy avocado. I hope you like it!

For the chicken:

chicken breast mini fillets

wholegrain mustard

Tabasco sauce


chilli powder

chopped fresh chilli (I used lazy chilli)

1 glove of garlic

glug of olive oil

Juice of half a lime

salt and pepper

For the dip:

1 avocado

fresh coriander

Tbsp of mayo

fresh chilli (again I used lazy chilli)

salt and pepper


Combine all the chicken ingredients in a bowl, mixing to ensure the marinade covers the chicken evenly. Leave to sink in for about 20 minutes. After that time cook them in the oven at about 180C for 15 minutes.

Just before they are ready, prepare the avocado dip. Mush up the avocado with a fork and combine all the ingredients. Ideally a food processor would do the job for you but I’m not lucky enough to have one! In the meantime a spot of elbow grease does the job just fine.

When both elements are ready plate up and serve with some green beans, or even some tortilla wraps would be nice!
