After a few days staying away I came home craving healthy foods. My fridge was empty so I had to make do with what was on offer; some leftover smoked salmon, beef tomatoes, frozen broccoli and eggs. Always eggs 🙂 I love me some eggs. This was pretty tasty and sorted me out with regards to vegetables cravings! The protein filled me up too.
After an early Body Pump session on Saturday I came home to yet again, leftovers! Two beef burgers and whilst I was out perusing my veggie patch I dug up my first beetroot (albeit a little early methinks…) and decided to do the taste test! I bough yellow beetroot seeds on purpose because they save on the pink stains that come with the regular kind. I don’t know why I am so shocked to report that this actually tasted like normal beetroot! I just steamed it in the microwave because I wasn’t sure what else to do with it. Any suggestions?
I was looking for a way to use up some sundried tomatoes (otherwise I’m just eating them out of the jar :-s) so I mixed them up with some oil, vinegar, garlic, chilli and seasoning to make a dressing. I used it on a nice salmon fillet before steaming and drizzled the extra over some broccoli. Tasty stuff!
The paleo pancake addiction continues…… I think I could create a whole gallery dedicated to pancake photographs! I used up some fresh blueberries in this batch which turned out quite nice. I thought they would be a bit bitter but they were actually delicious and made the batter go further than usual, meaning extra pancakes for me!
