Eating clean can be an expensive and time consuming business, so getting organised is key. Here are my favourite store cupboard ingredients for supper emergencies:
Tinned Tomatoes: Just the ticket when all you have is random leftover vegetables. Sautee the veggies in a pan then add the tomatoes and season with salt and pepper. Bring to the boil then simmer for 15 mins for a quick home made ratatouille, great served with sweet potato fries!
Very Lazy Chopped Garlic/Red Chillies: I’m not even embarrassed to admit I own these. Chopping garlic is my most hated job, so these jars are a lifesaver when it comes to cooking. These can spice up sauces and soups, or act as a great base for a stir-fry. Heat some sesame oil in a pan then add half a teaspoon of garlic and chillies, add some grated ginger then toss in your favourite stir-fry ingredients before seasoning with soy sauce.
Spices: My current addiction is smoked paprika. Sprinkle liberally on chicken strips before cooking for an easy fajita flavouring, or add to chilli for a tex-mex twist. Cinnamon is great to sweeten up protein pancakes and combined with cumin and garam masala adds depth to basic curry recipes.
