Salads are often presented as boring, healthy options which must be endured rather than enjoyed. During the summer months I love to put together a mouthwatering meal with as many fresh and colourful salad ingredients as I can afford. I find the more variety the better, especially when it comes to contrasting textures and flavours. Pictured above is a prawn salad with grated carrot, red onion, cherry tomatoes, peppers, cucumber, sun blushed tomatoes and toasted pumpkin seeds. Compare this to a lunch box sandwich – which one would you prefer?!
Another appetising supper is a warm chicken salad. Here I chopped up a sweet potato and sautéed it in some olive oil, then added seasoned chicken strips with a sprinkling of smoked paprika. Once cooked serve with crunchy lettuce, a drizzle of honey or agave nectar and add some nuts or seeds for added healthy fats. I’m getting hungry writing this!
