3 ways with eggs

I am constantly looking for new ways to have eggs in the morning. I have experimented eating other types of protein like chicken, leftover beef chilli or sliced salami for variety. These are great options for people with a strong stomach (and a heavy wallet) but for me the humble egg is the best choice for a filling and protein rich breakfast. These meal ideas are nothing extraordinary, but I know from personal experience that sometimes we just need a bit of inspiration for recipes which are new to our daily routine.

1. Soft Boiled Eggs: I can’t do these every day because I’m simply too impatient to wait for them to boil, but as a weekend treat, lunch or a light evening meal they are definitely do-able. Serve with an assortment of raw vegetables and a little parma ham to add to your protein intake.

2. Eggs & Asparagus: There is something about asparagus that makes a meal appear so much more glamorous to me! Just lightly steam a few spears to serve with eggs scrambled to your liking, I personally favour lots of seasoning in the form of salt and pepper instead of milk or butter. I ate this with cashew nuts to add some healthy fats to my plate.

3. Protein Pancakes: Crack one egg in a bowl and add one scoop of protein powder then about half a scoop of ground almonds. Whisk with a fork and cook the batter in a pan until bubbling, then flip and cook for another 30 seconds. I served this with tinned peaches as the pancake itself needs a bit of sweetening for my tastes. This is my favourite weekend breakfast, although I regularly make these during the week when I crave something fun. Great additions are bananas, blueberries and a big dollop of nut butter!
